Righty... I know that you can adjust the speed of a track by sliding the BPM up or down while recording but what I want to do is slow it down very quickly (it needs to sound like a deck being turned off and the record coming to a halt) and then I need it to be back at normal speed as soon as it stops.
If anyone can help me with this it would be appreciated, cheers.

OK nice one mate :) Got a good idea for a freeform tune and I'm gonna have to either do this in it or have it so it sounds like the records being pulled up by someone.

Yeah you need to do what MJ said. If you use tempo automation this will not give the effect you want, which is everything to drop in pitch and slow down.
