What plugin ARe you using on FL? Cause for the normal Packs it should let you hear the sound before you add it.

I don't know of any music programs (legitimate ones at least) that are easier than fruity loops.
there are forums online dedicated to helping people in music programs like
http://www.pixel2life.com/tutorials/FruityLoops/All/ or http://www.davidngoliath.com/ I don't use it so I couldn't tell you what site would be more helpful

Finding the right sounds and getting everything to fit right is prolly one of the hardest aspects of producing, along with composition.
The best place to start is get yourself some vsts and quality samples and then mix n match, apply fx and tweak em till how u want it to sound.
Functionality wise, FL comes with tutorials that show you briefly what you can do with the stock vsts that come with it.
Under the options menu, go to 'General Settings' and there should be a check box there that says "Fast Sample Preview". This when checked should allow you to preview Wav samples before you load em.
Tempowise, anything above 170bpm and up ; )
