Surely there's little difference between the different 1210's. Have you considered any other brand, such as Vestax? They seem to have a lot more features than technics, but maybe you wouldn't use these anyway.
By pick up do you mean cartridge? If so ortofons are good. I reccomend the pro-s. Very nice.

Technics beat anything, period.
and they're indestructible and easily serviceable
and the clubs all have em' so you have no trouble adjusting
unless you're a scratch dj and even then...look what they have at the DMC championships - tech12s
but back on topic
cartridges...
The best bang for the buck is likely the Shure M44G (hi-fi, low weight, low record wear) or M44-7 (sound isn't as good but take more weight for scratching and such)
If you've got money (you seem to) and want good sound but good tracking anyways get the Ortofon Concordes or the Shure Whitelabels
Both are great...some prefer the whitelabels though

As for decks - get the Tech 12's unless you scratch/battle. And if you've already got a mkII, stick with mkII's.
There's a reason Technics are *THE* standard. They work right, they feel right, they sound right, and they're tough like a machine tool. They'll last you a lifetime if you take reasonable care of them and you can re-sell them for nearly as much you paid for them if you ever need to (especially if you have a matching pair).
The Stanton 520 and 680 are not bad pickups but I really hate the Discmaster. I've also had good luck with the 500AL2's - they're cheap ($50/pair) and reliable, although the sound isn't quite as good and the wear is marginally higher. I've heard a lot of my DJ friends say their Orto-Concordes haven't held up as well as they would have expected for what they cost...but I admit they do look good and sound pretty good when they are working. As for Shure....I don't have much experience with they're new stuff.....I thought they're old stuff sucked but I have always liked they're microphones.

I hate the Stanton 500 series
they suck
the tracking needs to be set to at least 3 grams if you want proper tracking and they skip alot more easily than my shures at 1.5g anywyas :S
so you wear your records down more for nothing
plus the sound quality on them is crappy compared to the shure m44s
apparently the 680s are marginally better but still... if you're gonna be in that price range get the shure needles
if you have more money get the whitelabels or the concordes
